How should the auction countdown be built?

From the server, never from the device clock. A phone with a clock a few minutes out will show a bidder a lot as open after it has closed, and that is the argument you cannot win afterwards. Send the closing timestamp and calculate against a synced offset.

What is the difference between a starting bid and a reserve?

The starting bid is where bidding opens and the reserve is the price below which the seller will not sell. Showing one and hiding the other is normal, but the screen should say when a reserve exists or bidders feel misled at the close.

How do I stop last second bidding from ending an auction badly?

Ask your AI to extend the close by a few minutes whenever a bid lands inside the final window. Almost every serious online auction does this, and without it your highest bidder is whoever has the best connection.

Can I use this for auctions that are not art?

Yes. Watches, wine, memorabilia, cars and rare books all need the same things: the lot, the closing time, what the object actually is, and where the bidding stands.
